  • 2 pounds baby back ribs or St. Louis style ribs
  • 2 tablespoons fresh ginger, finely grated
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce (preferably low sodium)
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons brown sugar, packed
  • 1/2 teaspoon chili flakes (optional)
  • 2 stalks scallions, thinly sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with foil for easy cleanup.
  2. Remove the silver skin membrane from the back of the ribs for tenderness. Season both sides lightly with salt and pepper.
  3. In a bowl, whisk together grated ginger, minced garlic, soy sauce, honey, rice vinegar, sesame oil, brown sugar, and chili flakes if using. Stir until the sugar dissolves, about 5 minutes.
  4. Place ribs on the baking sheet and brush a generous layer of the glaze on both sides. Reserve some glaze for later.
  5. Cover tightly with foil and roast for 1 hour to break down connective tissue and tenderize the ribs.
  6. After 1 hour, remove foil and brush ribs again with glaze. Increase oven temperature to 425°F (220°C).
  7. Roast uncovered for 15-20 minutes, basting with remaining glaze every 5 minutes to caramelize the glaze into a sticky, glossy finish.
  8. Check that ribs are tender and slightly charred at edges; meat should pull away from bones easily.
  9. Rest ribs for 5 minutes before slicing between the bones.
  10. Garnish with sliced scallions and serve hot.

Notes

Remove the silver skin membrane for tenderness. Brush glaze in layers during cooking for a sticky coating. Tent with foil if glaze darkens too fast. Fresh ginger is essential for best flavor. For gluten-free, use tamari instead of soy sauce. Slow roasting at low heat breaks down connective tissue for tender ribs.
