Flavorful Bacon and Jalapeno Deviled Eggs

A smoky, spicy, and creamy deviled eggs recipe featuring crispy bacon, fresh jalapenos, and smoked paprika. Perfect for parties and easy to make.

  • 12 large eggs, hard-boiled
  • 6 slices bacon, cooked until crispy
  • 12 medium jalapeno peppers, finely diced
  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika, plus extra for garnish
  • Salt and freshly ground black pepper to taste
  • Fresh chives, finely chopped for garnish (optional)

Instructions

  1. Place 12 large eggs in a single layer in a large pot and cover with cold water, about 1 inch above the eggs. Bring to a rolling boil over medium-high heat, then cover the pot, turn off the heat, and let the eggs sit for 12 minutes.
  2. Transfer eggs immediately to a bowl of ice water to cool for at least 5 minutes. Tap each egg gently on the counter, peel under running water to remove shells smoothly, and pat dry.
  3. Cook 6 slices of bacon in a skillet over medium heat until crisp but not burnt (about 6-8 minutes). Drain on paper towels, then chop into small pieces.
  4. Slice the peeled eggs in half lengthwise and carefully remove the yolks into a medium bowl. Mash yolks with a fork or potato masher until crumbly but not powdery.
  5. Add 1/3 cup mayonnaise, 2 tablespoons sour cream, 1 teaspoon Dijon mustard, 1 teaspoon apple cider vinegar, 1 teaspoon smoked paprika, and salt and pepper to taste. Stir until smooth and creamy.
  6. Fold in the diced jalapenos (start with one, then add more if you want extra heat) and chopped bacon, reserving a few pieces for garnish.
  7. Using a spoon or piping bag, fill each egg white half generously with the yolk mixture.
  8. Sprinkle a pinch of smoked paprika and reserved bacon bits over the top, add a few chopped chives if desired. Chill in the fridge for at least 15 minutes before serving.

Notes

If filling is too thick, add more mayo or sour cream to loosen. If too runny, add a pinch of powdered egg yolk or more mashed yolk. Chill for at least 15 minutes before serving to meld flavors and firm filling. Store covered in fridge up to 2 days; add garnish fresh before serving.
