A quick and easy appetizer featuring smoky bacon wrapped around sweet Medjool dates stuffed with creamy goat cheese, perfect for entertaining or a simple indulgence.

Ingredients

  • Medjool dates, pitted, large-sized
  • Bacon, thin or regular cut, raw
  • Goat cheese, soft and creamy variety (chèvre preferred)
  • Optional add-ins: chopped toasted almonds or pecans
  • Optional add-ins: fresh herbs like thyme or rosemary
  • Optional add-ins: drizzle of honey
  • Toothpicks for securing bacon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a cooling rack on top if available.
  2. Using a small sharp knife, make a lengthwise slit in each date and gently remove the pit if not already pitted.
  3. Spoon about 1 teaspoon (about 0.18 tablespoons) of creamy goat cheese into each date’s cavity. Mix in nuts or herbs with goat cheese if using.
  4. Cut bacon slices in half or thirds if very wide. Wrap each stuffed date with a piece of bacon, securing with a toothpick through the center.
  5. Place the wrapped dates seam side down on the prepared rack or directly on the foil-lined baking sheet.
  6. Bake for 15-20 minutes, turning once halfway through, until bacon is crispy and golden brown. Watch closely near the end to avoid burning.
  7. Let cool for 5 minutes before serving.

Use thin bacon for faster crisping and easier wrapping. Don’t overstuff dates with goat cheese to prevent flare-ups or soggy bacon. Flip dates halfway through baking for even crispiness. Chilling wrapped dates for 15 minutes before baking helps bacon hold shape. Watch closely near the end to avoid burning. Air fryer can be used to reduce cooking time but requires attention for even crispness.
