  • 1 ripe avocado, peeled and pitted
  • ½ cup sour cream or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 garlic clove, minced
  • Salt to taste
  • Optional: a handful of fresh cilantro
  • 8 small corn or flour tortillas (warmed)
  • 1 cup shredded red cabbage
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions

  1. In a medium bowl, combine smoked paprika, cumin, chili powder, garlic powder, salt, and pepper. Toss shrimp in olive oil, then coat evenly with the spice mix. Let sit for 5 minutes.
  2. While shrimp marinates, blend avocado, sour cream, lime juice, minced garlic, and salt until smooth. Add cilantro if using and pulse to combine. Refrigerate until ready to use.
  3. Heat skillet over medium-high heat. Cook shrimp in a single layer for about 2 minutes per side until pink and opaque with slight char. Squeeze fresh lime juice over shrimp.
  4. Warm tortillas in a dry skillet for 20-30 seconds per side or wrap in foil and heat in a 250°F oven until warm.
  5. Assemble tacos by spreading avocado crema on each tortilla, topping with 3-4 shrimp, shredded cabbage, and cilantro leaves. Serve immediately with lime wedges.
