A simple yet delicious appetizer featuring roasted cherry tomatoes with balsamic vinegar, fresh basil, and toasted baguette slices. Perfect for quick entertaining or casual snacking.

  • 2 cups (300g) cherry tomatoes, halved
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra-virgin olive oil, plus extra for brushing bread
  • 2 garlic cloves, minced
  • 1520 fresh basil leaves, torn or chopped
  • 1 loaf French baguette or rustic Italian bread, sliced ½-inch thick
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Balsamic glaze (optional), for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a mixing bowl, combine halved cherry tomatoes, 2 tablespoons balsamic vinegar, 2 tablespoons olive oil, minced garlic, about ½ teaspoon salt, and about ¼ teaspoon freshly ground black pepper. Stir gently to coat and let sit for 5 minutes to marinate.
  3. Spread the tomato mixture evenly on the prepared baking sheet. Roast in the oven for 15-20 minutes until tomatoes are soft, caramelized, and the balsamic has thickened into a syrupy glaze.
  4. While tomatoes roast, slice the baguette into ½-inch thick rounds. Lightly brush both sides with olive oil.
  5. Toast the bread on a baking sheet or grill pan for 3-5 minutes per side until golden brown and crisp.
  6. Once roasted tomatoes have cooled slightly but are still warm, spoon them generously onto each toasted bread slice.
  7. Scatter torn fresh basil leaves over the top of each bruschetta.
  8. Optionally, drizzle with balsamic glaze and sprinkle flaky sea salt for extra flavor and shine.
  9. Serve immediately while bread is crisp and tomatoes are warm. Store leftover topping and bread separately.

Roast tomatoes for at least 15 minutes to caramelize sugars and thicken balsamic. Toast bread until crisp but not burnt, brushing both sides with olive oil for best texture. Add fresh basil last to preserve brightness. Store topping and bread separately to avoid sogginess.
