A quick and easy bruschetta bar featuring toasted garlic-rubbed bread and three delicious toppings: classic tomato basil, whipped ricotta with lemon and herbs, and roasted red peppers with balsamic glaze. Perfect for gatherings or casual snacking.

Ingredients

Scale
  • Baguette or Italian bread, sliced about ½ inch thick (day-old bread works great for better toasting)
  • Extra-virgin olive oil, for brushing the bread slices
  • Garlic cloves, halved, for rubbing on toasted bread
  • Sea salt, a pinch to season the bread
  • For Topping 1: Classic Tomato Basil
  • Roma tomatoes, finely diced (about 2 cups)
  • Fresh basil leaves, finely chopped (about ¼ cup)
  • Red onion, minced (about 1 tablespoon, optional)
  • Garlic, minced (1 clove)
  • Extra-virgin olive oil (2 tablespoons)
  • Balsamic vinegar (1 tablespoon)
  • Salt and freshly ground black pepper, to taste
  • For Topping 2: Whipped Ricotta with Lemon and Herbs
  • Ricotta cheese, whole milk (about 1 cup)
  • Lemon zest from one lemon
  • Fresh thyme or oregano, finely chopped (1 tablespoon)
  • Honey (1 teaspoon)
  • Salt, a small pinch
  • For Topping 3: Roasted Red Peppers with Balsamic Glaze
  • Jarred roasted red peppers, drained and sliced (about 1 cup)
  • Fresh garlic, minced (1 clove)
  • Balsamic glaze, for drizzling
  • Fresh parsley, chopped (2 tablespoons)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet in a single layer.
  2. Brush each slice lightly with extra-virgin olive oil to help the bread toast golden and crispy without drying out.
  3. Toast the bread slices for 6-8 minutes until golden brown around the edges but not burnt.
  4. As soon as the bread comes out, rub each slice with the cut side of a garlic clove to infuse subtle garlic flavor.
  5. Prepare Topping 1: Mix diced Roma tomatoes, chopped basil, minced red onion, garlic, olive oil, balsamic vinegar, salt, and pepper. Let sit for 10 minutes to meld flavors.
  6. Prepare Topping 2: Whip ricotta with lemon zest, herbs, honey, and a pinch of salt until smooth and creamy (2-3 minutes by hand or 1 minute with a mixer).
  7. Prepare Topping 3: Toss sliced roasted red peppers with minced garlic, parsley, salt, and pepper. Drizzle with balsamic glaze right before serving.
  8. Arrange toasted bread slices on a serving board or platter. Place each topping in small bowls with spoons for guests to build their own bruschetta.
  9. Encourage layering: start with a smear of whipped ricotta, add tomato mixture or roasted peppers, and top with fresh herb garnish if desired.
  10. Enjoy immediately while the bread is still crisp. If prepping ahead, keep toppings covered in the fridge and toast bread just before serving.

Notes

Use day-old bread for better toasting and less sogginess. Drain excess juice from tomatoes to avoid soggy bread. Rub garlic on warm toasted bread for best flavor. Whip ricotta thoroughly for a light texture. Toast bread last minute and prepare toppings ahead for smooth assembly. Adjust seasoning and acidity to taste. Fresh herbs are preferred over dried. For vegan version, substitute ricotta with whipped tofu or cashew cream and ensure balsamic glaze is vegan-friendly.
