  • 2 tablespoons olive oil (30 ml) for frying chicken
  • 4 medium russet potatoes, peeled and cut into fries
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning or a mix of dried oregano and basil
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Peel and cut potatoes into ¼ inch (6 mm) thick sticks. Rinse under cold water and pat dry.
  2. Toss fries with 2 tablespoons olive oil and a pinch of salt in a large bowl. Spread in a single layer on a parchment-lined baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  3. Season chicken fillets on both sides with salt, pepper, and Italian seasoning. Let sit at room temperature for 10 minutes.
  4. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook chicken for about 5 minutes per side until golden and internal temperature reaches 165°F (74°C). Remove and keep warm.
  5. Reduce heat to medium-low. Add softened butter to the skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant but not browned.
  6. Gradually pour in heavy cream while stirring. Slowly add grated Parmesan cheese, stirring continuously until sauce thickens (3-4 minutes). Season with salt and pepper. Add water or more cream if sauce is too thick.
  7. Return chicken to the skillet and spoon sauce over each piece. Simmer for 2-3 minutes to absorb flavors.
  8. Serve chicken fillets drizzled with extra sauce alongside crispy fries. Garnish with chopped fresh parsley if desired.
