- 1 cup (240 ml) boiling water
- 1/2 cup (120 ml) cold water
- 1/2 cup (120 ml) vodka
- 2 tablespoons (30 ml) fresh lime juice
- 1 to 2 tablespoons (15–30 ml) jalapeño juice
- 1 tablespoon granulated sugar (optional)
Instructions
- Pour 1 cup (240 ml) boiling water into a medium bowl. Sprinkle the gelatin powder evenly over the surface. Let it sit for 1 minute to bloom, then whisk gently until completely dissolved and smooth, about 2-3 minutes.
- Stir in 1 tablespoon sugar (if using) until dissolved. Add 1/2 cup (120 ml) cold water to cool the mixture slightly.
- Add 1/2 cup (120 ml) vodka, 2 tablespoons (30 ml) fresh lime juice, and 1 to 2 tablespoons (15-30 ml) jalapeño juice. Whisk gently but thoroughly to combine. Taste and adjust jalapeño juice for desired heat.
- Quickly pour the mixture into jello shot cups or silicone molds, filling each about 3/4 full.
- Refrigerate for at least 2-3 hours until fully set and firm. Alternatively, chill in the freezer for 1 hour but do not freeze solid.
- Serve chilled. If using silicone molds, gently pop each shot out by pressing from the bottom. Optionally garnish with a small slice of jalapeño or lime wedge.
Notes
Use fresh lime juice for brighter flavor. Adjust jalapeño juice carefully as heat intensifies after chilling. For vegan option, substitute gelatin with agar-agar powder but expect different texture. Avoid freezing to prevent watery texture. Use a fine mesh sieve for ultra-smooth texture. If shots are too firm, reduce gelatin slightly; if too soft, add more gelatin.
