  • 1 pound fresh or thawed skinless cod fillets
  • 1 bunch fresh asparagus (about 1 pound), trimmed
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons mixed fresh parsley, thyme, and dill, chopped
  • Zest and juice of 1 lemon
  • 1 tablespoon olive oil
  • Salt and freshly cracked black pepper to taste
  • Optional: red pepper flakes or smoked paprika for extra flavor

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
  2. In a small mixing bowl, combine softened butter, minced garlic, chopped fresh herbs, lemon zest, salt, and pepper. Mix well.
  3. Trim the asparagus by snapping off the woody ends. Toss asparagus with olive oil, salt, and pepper. Spread on one side of the baking sheet in a single layer.
  4. Pat cod fillets dry with paper towels and place on the opposite side of the baking sheet from the asparagus.
  5. Generously coat each cod fillet with the garlic herb butter mixture, reserving some to drizzle over the asparagus.
  6. Drizzle remaining butter over asparagus and squeeze fresh lemon juice over both fish and asparagus.
  7. Bake for 12-15 minutes, until the fish is opaque and flakes easily with a fork and asparagus is tender but crisp.
  8. Serve immediately, garnished with fresh herbs or a lemon wedge if desired.

Notes

Pat the cod dry before baking to help the butter stick and avoid steaming. Use fresh herbs for best flavor. Check fish at 12 minutes to avoid overcooking. Can substitute cod with haddock or halibut. For dairy-free, replace butter with olive oil or vegan butter.
