Flavorful Grilled Nectarine and Burrata Flatbread with Honey Balsamic

A quick and easy flatbread featuring grilled nectarines, creamy burrata cheese, and a homemade honey balsamic glaze. Perfect for a light meal or entertaining with a balance of sweet, smoky, and tangy flavors.

  • 1 store-bought or homemade flatbread (810 inches diameter), whole wheat preferred
  • 2 tbsp extra-virgin olive oil (for brushing)
  • 1 clove garlic, minced (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 ripe nectarines, halved and pitted
  • 1 tbsp olive oil (for brushing nectarines)
  • 8 oz burrata cheese, drained and at room temperature
  • Fresh basil leaves, torn
  • 3 tbsp balsamic vinegar
  • 2 tbsp honey
  • Pinch of salt

Instructions

  1. Preheat grill or grill pan to medium-high heat. Brush nectarine halves with olive oil. Grill cut side down for 3-4 minutes until grill marks appear and fruit softens slightly but holds shape. Flip and grill skin side for 2 minutes. Remove and let cool slightly, then slice into wedges.
  2. In a small saucepan over medium heat, combine balsamic vinegar, honey, and a pinch of salt. Simmer gently, stirring occasionally, until mixture thickens and reduces by half (5-7 minutes). Remove from heat and let cool slightly.
  3. Brush flatbread lightly with olive oil mixed with minced garlic (if using). Season with salt and pepper. Grill flatbread for 2-3 minutes per side until warm with grill marks, crispy on edges but pliable.
  4. Remove flatbread from grill and place on serving board. Tear burrata into chunks and distribute evenly over flatbread. Arrange grilled nectarine wedges on top and tuck basil leaves between.
  5. Drizzle honey balsamic glaze evenly over flatbread. Optionally sprinkle cracked black pepper.
  6. Serve immediately while warm so cheese is soft and flatbread retains crunch.

Notes

Let burrata rest at room temperature for 20 minutes before assembling for best texture. Watch nectarines closely on grill to avoid mushiness. The honey balsamic glaze can be made ahead and stored refrigerated. For vegan version, substitute burrata with cashew cheese and honey with maple syrup. If no grill available, use broiler or grill pan and toast flatbread in oven.
