A quick and easy grilled pineapple recipe with a rich brown sugar glaze that caramelizes beautifully, perfect for summer gatherings or a sweet treat.

  • 1 medium fresh pineapple, peeled, cored, and sliced into ½-inch thick rings or wedges
  • ½ cup packed brown sugar (preferably dark brown sugar)
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon ground cinnamon (optional)
  • Juice of half a lime
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions

  1. Peel and core the pineapple, then cut into ½-inch thick rings or wedges.
  2. In a medium bowl, combine brown sugar, melted butter, ground cinnamon (if using), vanilla extract, salt, and lime juice. Stir until smooth and glossy.
  3. Preheat grill to medium-high heat (about 375°F).
  4. Using a pastry brush, coat each pineapple slice generously with the brown sugar glaze on both sides.
  5. Place the glazed pineapple slices on the grill and cook for 3-4 minutes per side until deep golden grill marks appear and the glaze is bubbling and caramelized. Use tongs to flip carefully.
  6. Remove from grill and serve warm. Optionally, spoon leftover glaze over the pineapple.

Notes

Use fresh pineapple for best results; canned pineapple is too soft and watery. Watch the grill heat carefully to avoid burning the sugar glaze. Pat pineapple dry if very juicy before glazing. Avoid overcrowding the grill for even cooking. Can substitute coconut oil for butter to make dairy-free or vegan.
