  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Thread shrimp onto skewers, about 5-6 per skewer, leaving a little space between each.
  3. In a mixing bowl, combine melted butter, minced garlic, lemon juice, olive oil, smoked paprika, salt, and pepper. Whisk until fully blended.
  4. Place shrimp skewers in the bowl and toss gently to coat evenly with the marinade. Let sit at room temperature for about 15 minutes.
  5. Preheat grill to medium-high heat (about 400°F or 200°C). Oil the grill grates lightly to prevent sticking.
  6. Place shrimp skewers on the grill and cook for about 3-4 minutes per side, turning once carefully with tongs, until shrimp turn opaque and develop a slight char. Aim for an internal temperature of 120°F (49°C) if using a thermometer.
  7. Optionally, baste shrimp with leftover garlic butter marinade once or twice during grilling to keep moist and flavorful.
  8. Remove skewers from grill and sprinkle chopped fresh parsley over the top.
  9. Serve immediately while hot for best flavor and texture.
