Ingredients

  • Bone-in ham, fully cooked (about 5 pounds / 2.3 kg)
  • Honey (⅓ cup / 113 grams)
  • Pineapple rings (1 can or about 8 rings, drained)
  • Brown sugar (½ cup / 100 grams)
  • Dijon mustard (2 tablespoons / 30 ml)
  • Ground cinnamon (1 teaspoon / 2 grams, optional)
  • Whole cloves (about 10-12)
  • Apple cider vinegar (1 tablespoon / 15 ml)
  • Water (¼ cup / 60 ml)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from its packaging and pat dry with paper towels. Score the surface in a diamond pattern about ¼ inch deep.
  3. Insert whole cloves at the intersections of your diamond cuts.
  4. Place the ham in your roasting pan, flat side down.
  5. In a small saucepan, combine honey, brown sugar, Dijon mustard, cinnamon, apple cider vinegar, and water. Warm gently over medium heat, stirring until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
  6. Brush a generous layer of glaze over the ham. Cover the ham loosely with aluminum foil.
  7. Bake the ham for 60 minutes, basting with glaze every 15 minutes. Remove the foil during the last 15 minutes to let the glaze caramelize.
  8. Arrange pineapple rings on top of the ham, securing them with toothpicks if needed. Brush with remaining glaze and bake for another 10-15 minutes.
  9. Check the internal temperature aiming for about 140°F (60°C).
  10. Remove from oven and let the ham rest for 10 minutes before slicing.

Notes

Score the ham surface to allow glaze penetration but avoid cutting too deep to prevent drying out. Baste regularly to build a sticky-sweet crust and tent with foil if glaze starts to burn. Let the ham rest 10 minutes after baking for juiciness. Fresh pineapple can be used instead of canned; pat dry before glazing. For a spicy twist, add crushed red pepper flakes or hot sauce to the glaze. Slow cooker adaptation possible but glaze won’t caramelize as much.
