Juicy burgers stuffed with a creamy, cheesy jalapeño popper filling that delivers a perfect balance of heat and comfort. Easy to prepare and perfect for weeknights or gatherings.

Ingredients

Scale
  • 1 lb (450g) ground beef (80/20 blend)
  • 4 oz (115g) cream cheese, softened
  • ½ cup (50g) sharp cheddar cheese, shredded
  • 2 small jalapeños, finely chopped (remove seeds for milder heat)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil or vegetable oil
  • 4 sturdy burger buns (brioche or potato buns recommended)
  • Optional toppings: lettuce, tomato slices, pickles, favorite burger sauces

Instructions

  1. Prepare the creamy filling: Beat softened cream cheese until smooth. Stir in shredded cheddar, chopped jalapeños, garlic powder, and a pinch of salt. Set aside.
  2. Season the ground beef: In a mixing bowl, add onion powder, salt, and black pepper to the ground beef. Mix gently without overworking.
  3. Divide and shape patties: Split beef into 8 equal portions (~2 oz each). Flatten each into thin patties about 3 inches in diameter. Place a tablespoon of filling in the center of 4 patties.
  4. Seal the burgers: Top each filled patty with a plain patty. Pinch edges tightly to seal and form a uniform patty about ¾ inch thick.
  5. Preheat grill or skillet: Heat to medium-high and brush with oil to prevent sticking.
  6. Cook the burgers: Grill or pan-sear patties for 4-5 minutes per side until browned and internal temperature reaches 160°F (71°C). Filling should be melty and warm.
  7. Toast the buns (optional): Toast buns cut-side down on grill or skillet until golden and slightly crispy.
  8. Assemble and serve: Place each burger on a bun and add desired toppings.

Notes

Do not overmix the beef to keep patties tender. Seal edges tightly to prevent filling leakage. Chill patties for 15 minutes before cooking to help hold filling. Use a meat thermometer to ensure internal temperature reaches 160°F (71°C). Toast buns while burgers cook to save time.
