  • 23 chipotle peppers in adobo sauce

  • 1 teaspoon garlic powder
  • Black pepper to taste
  • Whole cloves (optional, about 10)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine 1 cup cherry preserves, 2-3 chopped chipotle peppers in adobo sauce, 1/4 cup brown sugar, 2 tablespoons Dijon mustard, 1 tablespoon apple cider vinegar, 1 teaspoon garlic powder, and freshly ground black pepper to taste. Whisk until smooth. Add a splash of water if too thick.
  3. Lightly score the surface of the ham in a diamond pattern about 1/4 inch deep (optional).
  4. Place the ham on the roasting rack in your pan. Stud the intersections of the scored diamonds with whole cloves if desired.
  5. Brush half the cherry chipotle glaze evenly over the ham. Reserve the other half for basting during cooking.
  6. Cover the ham loosely with foil to keep moisture in.
  7. Roast the ham for about 1.5 to 2 hours (15-18 minutes per pound), basting every 20-30 minutes with the reserved glaze. Remove foil for the last 20 minutes to let the glaze caramelize and develop a sticky, golden finish.
  8. Check internal temperature with a meat thermometer; it should reach 140°F (60°C).
  9. Remove the ham from the oven and let it rest for 10-15 minutes.
  10. Slice and serve.
