A quick and easy seven-layer taco dip combining seasoned ground beef, creamy beans, fresh veggies, melted cheese, and zesty salsa for a crowd-pleasing party snack.

  • 1 tablespoon taco seasoning (store-bought or homemade with chili powder, cumin, garlic powder, paprika)
  • 1/4 cup water
  • 1 can (15 oz) refried beans
  • 1 cup sour cream (or Greek yogurt for a healthier twist)
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1/2 cup chopped green onions (green and white parts)
  • 1/2 cup chopped black olives (optional)
  • 1/2 cup chopped fresh cilantro
  • 2 cups shredded sharp cheddar cheese (or Mexican blend)
  • 1 cup salsa (mild, medium, or hot)
  • Optional: sliced jalapeños for extra heat

Instructions

  1. Heat skillet over medium-high heat. Add ground beef and cook 6-8 minutes, breaking apart until browned and no pink remains. Drain excess fat.
  2. Stir in taco seasoning and 1/4 cup water. Simmer 2-3 minutes until water reduces and beef is coated. Remove from heat and set aside.
  3. In a medium bowl, combine refried beans with sour cream or Greek yogurt. Stir until smooth and creamy.
  4. Dice tomatoes, chop green onions, olives, and cilantro. Keep ready for layering.
  5. In a 9×13 inch dish, spread bean and sour cream mixture evenly over the bottom.
  6. Evenly distribute seasoned ground beef over the bean layer, pressing gently.
  7. Sprinkle diced tomatoes, green onions, olives, and cilantro evenly over the meat.
  8. Cover with shredded cheddar cheese, spreading evenly.
  9. Pour salsa over cheese layer, spreading gently. Add sliced jalapeños if desired.
  10. Cover with plastic wrap and refrigerate at least 1 hour to let flavors meld.
  11. Serve chilled with sturdy tortilla chips or veggie sticks.
