  • 2 tablespoons smoked paprika
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon garlic powder

  • ½ teaspoon cayenne pepper (optional)
  • 1 ½ teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Remove the silver skin membrane from the back of the ribs using a knife and paper towel (about 5 minutes).
  2. In a mixing bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Whisk until evenly mixed and clump-free.
  3. Lightly brush or rub olive oil over both sides of the ribs to help the dry rub adhere.
  4. Generously sprinkle the dry rub over both sides of the ribs, pressing it in with your hands to ensure it sticks.
  5. Wrap the ribs tightly in aluminum foil to create a sealed packet and refrigerate for at least 30 minutes or up to overnight for deeper flavor.
  6. Preheat the oven to 275°F (135°C).
  7. Place the foil-wrapped ribs on a baking sheet and bake for 2 ½ to 3 hours until the meat is tender and starting to pull away from the bones.
  8. Carefully remove ribs from the oven and unwrap the foil. Place ribs back on the baking sheet and broil for 3-5 minutes to caramelize the rub and form a crust, watching closely to avoid burning.
  9. Let the ribs rest for 5-10 minutes before slicing between the bones and serving.

Removing the membrane is crucial for tender ribs. Low and slow cooking at 275°F yields the best tenderness. Rest ribs after cooking to lock in moisture. Broil carefully to caramelize the rub without burning. For quicker cooking, bake at 300°F for about 2 hours but expect slightly less tenderness.
