  • ½ cup fresh lemon juice (about 34 medium lemons, 120 ml)
  • 12 medium jalapeño peppers, sliced (adjust seeds for heat preference)
  • ¼ cup honey or agave syrup (60 ml)
  • 2 cups cold water or sparkling water (480 ml)
  • Ice cubes
  • Fresh mint leaves (optional, for garnish)
  • Pinch of sea salt

Instructions

  1. In a medium saucepan, combine pineapple juice and sliced jalapeños. Bring to a gentle simmer over medium heat and let simmer for about 8 minutes, stirring occasionally.
  2. Remove from heat and strain the mixture through a fine mesh strainer into a large bowl or pitcher, pressing lightly on jalapeño slices to extract juice but avoiding seeds.
  3. Stir in freshly squeezed lemon juice.
  4. While the mixture is still warm, whisk in honey or agave syrup until fully dissolved.
  5. Add cold water or sparkling water to the pitcher and stir. Adjust dilution to taste.
  6. Add plenty of ice cubes to chill quickly.
  7. Taste and adjust sweetness, tartness, or fizz as desired.
  8. Pour into tall glasses and garnish with fresh mint leaves or a thin jalapeño slice.

Notes

Simmer gently to avoid bitterness. Adjust jalapeño seeds to control heat. Fresh lemon juice is essential for bright flavor. Chill thoroughly for best taste. Can prepare base up to 2 days ahead and add sparkling water and ice before serving. Use gloves when handling jalapeños to avoid irritation.
