These turkey taco lettuce wraps are a quick, healthy, and flavorful meal perfect for summer. They combine juicy spiced ground turkey with fresh, crisp lettuce for a light yet satisfying dish.

  • 1 pound ground turkey (93% lean recommended)
  • 1 tablespoon olive oil or avocado oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons taco seasoning (store-bought or homemade blend with chili powder, cumin, paprika, oregano, salt, and pepper)
  • 1 tablespoon tomato paste
  • 1/4 cup water
  • 810 large romaine or butter lettuce leaves, washed and dried
  • Fresh lime wedges
  • Fresh cilantro, chopped (optional)
  • Shredded sharp cheddar cheese or Mexican blend (optional)
  • Avocado slices or guacamole
  • Jalapeño slices (optional)
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Chop 1 small yellow onion finely, mince 2 cloves of garlic, and roughly chop a handful of fresh cilantro if using. Wash and gently pat dry 8-10 large romaine or butter lettuce leaves and set aside.
  2. Heat 1 tablespoon olive or avocado oil in a large skillet over medium heat until shimmering.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and cook for another 30 seconds until fragrant, being careful not to burn it.
  5. Crumble 1 pound ground turkey into the pan. Break it up with a spatula and cook until no longer pink, about 6-8 minutes, allowing it to brown slightly.
  6. Sprinkle in 2 tablespoons taco seasoning and stir well to coat the turkey.
  7. Add 1 tablespoon tomato paste and 1/4 cup water. Mix and let simmer for 3-5 minutes until fragrant and slightly saucy.
  8. Taste and adjust seasoning with salt or more taco seasoning if needed.
  9. Spoon about 1/4 cup of the turkey mixture into each lettuce leaf.
  10. Top with shredded cheddar cheese, sliced avocado, jalapeño slices if desired, a dollop of sour cream or Greek yogurt, and a sprinkle of fresh cilantro.
  11. Squeeze fresh lime over the top and serve immediately.

Notes

If turkey feels dry, add a splash of chicken broth or extra water during cooking. Avoid overcrowding the pan to ensure proper browning. Use fresh spices for best flavor. Assemble wraps just before serving to keep lettuce crisp. For dairy-free, omit cheese and sour cream or substitute with cashew cream or coconut yogurt.
