  • ¼ cup (56g) unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a large bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, ½ teaspoon salt, and 2 tablespoons granulated sugar.
  2. In another bowl, whisk 2 cups fresh buttermilk with 2 large eggs, ¼ cup melted unsalted butter, and 1 teaspoon pure vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients. Gently fold together with a spatula just until combined; the batter should be lumpy but without large pockets of flour.
  4. Heat a non-stick skillet or griddle over medium heat (about 375°F). Lightly grease with butter or oil.
  5. Pour ¼ cup batter for each pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2 to 3 minutes.
  6. Flip carefully and cook for another 1 to 2 minutes until golden brown on both sides.
  7. Transfer cooked pancakes to a plate and cover loosely with foil to keep warm while finishing the batch.
