  • 1 tablespoon baking powder
  • 1/4 cup (50 g) sugar
  • 1/2 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, cold and cubed
  • Zest of 1 large orange
  • 3/4 cup (180 ml) heavy cream
  • 1 large egg, lightly beaten
  • 1 cup (100 g) fresh or frozen cranberries
  • 1/2 cup (90 g) white chocolate chips (for glaze and optional in dough)
  • 1 cup (120 g) powdered sugar
  • 23 tablespoons milk or cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, salt, and orange zest.
  3. Cut in the cold, cubed butter using a pastry cutter or two knives until mixture resembles coarse crumbs with some pea-sized pieces.
  4. Fold in cranberries gently to avoid crushing.
  5. In a separate bowl, whisk together heavy cream and beaten egg until smooth.
  6. Pour wet mixture into dry ingredients and fold gently until just combined; dough will be sticky.
  7. Turn dough onto a floured surface and pat into a 7-inch (18 cm) circle about 1 inch (2.5 cm) thick.
  8. Cut the circle into 8 wedges with a sharp knife.
  9. Place wedges on prepared baking sheet about 2 inches (5 cm) apart and chill in the fridge for 10 minutes.
  10. Bake for 18-22 minutes until golden and a toothpick inserted comes out clean.
  11. While baking, melt white chocolate chips gently and mix with powdered sugar, milk or cream, and vanilla extract to make glaze.
  12. Drizzle glaze over warm scones and let set for at least 15 minutes before serving.
