  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 cup (240ml) warm whole milk
  • 2 tablespoons granulated sugar
  • 4 tablespoons (56g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon salt
  • Black sesame seeds or mini chocolate chips (optional, for decorating bunny eyes)

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk (about 110°F/43°C) with sugar and yeast. Stir gently and let sit for 5-10 minutes until foamy and bubbly.
  2. Mix dry ingredients: In a large bowl or stand mixer, whisk together flour and salt.
  3. Add wet ingredients: Pour the yeast mixture into the flour bowl along with softened butter and egg. Mix on low speed until a sticky dough forms.
  4. Knead the dough: Knead by machine for 6-8 minutes or by hand on a lightly floured surface for 8-10 minutes until smooth, elastic, and slightly tacky but not sticky. Add flour 1 tablespoon at a time if too sticky.
  5. First rise: Shape dough into a ball and place in a greased bowl, turning once to coat. Cover and let rise in a warm, draft-free place for 1 to 1 ½ hours until doubled in size.
  6. Shape the bunny rolls: Punch down dough and divide into 12 equal pieces (~60g/2 oz each). Roll one piece into a ball (body), pinch off two small pieces for ears, shape ears into ovals, make a small tail from another pinch, and assemble by pressing gently onto the body.
  7. Second rise: Place shaped bunnies on parchment-lined baking sheet, leaving space to expand. Cover loosely and let rise for 30-45 minutes until puffy.
  8. Preheat oven to 375°F (190°C). Add eyes using black sesame seeds or mini chocolate chips, pressing lightly to stick.
  9. Bake for 15-18 minutes until golden brown on top.
  10. Cool on a rack for 10 minutes. Serve warm with butter or jam.

Notes

If dough is slow to rise, warm oven to 200°F (93°C), turn off, and place dough inside with door slightly ajar for a cozy rising spot. Use room temperature ingredients for best results. Brush rolls with melted butter after baking for extra shine. For gluten-free option, use gluten-free baking blend with xanthan gum. Dairy-free options include coconut or almond milk and plant-based butter substitutes.
