  • 1 cup (8 oz / 250 g) whole milk ricotta cheese
  • 1 1/2 cups (6.7 oz / 190 g) all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 large eggs, room temperature
  • 3/4 cup (6 fl oz / 180 ml) milk (whole or 2%)
  • 2 teaspoons lemon zest (from about 1 lemon)
  • 1 cup (5.3 oz / 150 g) fresh or frozen blueberries
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter (for cooking)
  • 23 tablespoons honey (for drizzling)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In another bowl, beat the eggs until frothy. Stir in ricotta cheese, milk, vanilla extract, and lemon zest.
  3. Make a well in the dry ingredients and pour in the wet mixture. Gently fold together using a spatula until just combined; batter should be slightly lumpy.
  4. Carefully fold in the blueberries.
  5. Heat a non-stick skillet or griddle over medium heat. Melt about 1 teaspoon of butter and spread evenly.
  6. Pour 1/4 cup batter per pancake onto the skillet. Cook 2-3 minutes until bubbles form and edges look set. Flip and cook another 2 minutes until golden and cooked through.
  7. Transfer cooked pancakes to a warm plate and tent loosely with foil to keep warm.
  8. Stack pancakes, drizzle generously with honey, and serve immediately. Optionally, add extra lemon zest or powdered sugar.

Notes

Use fresh lemon zest for best flavor. Do not overmix batter to keep pancakes fluffy. If batter is too thick, add a tablespoon of milk. Keep cooked pancakes warm by tenting with foil or placing in a low oven (200°F). Frozen blueberries can be added directly without thawing.
