  • 1 tablespoon extra virgin olive oil
  • Flaky sea salt (to taste)
  • Freshly cracked black pepper (to taste)
  • Optional toppings: red pepper flakes, balsamic glaze, toasted sesame seeds

Instructions

  1. Toast 2 slices of rustic sourdough or whole grain bread until golden and crisp, about 3-4 minutes in a toaster or 2-3 minutes per side on a grill pan over medium heat.
  2. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash gently with a fork, keeping it a bit chunky.
  3. Stir in 1 tablespoon freshly squeezed lemon juice and 1 tablespoon extra virgin olive oil.
  4. Season the avocado with flaky sea salt and freshly cracked black pepper to taste. Stir and adjust seasoning as needed.
  5. Rinse and halve 1 cup cherry tomatoes. Rinse and pat dry microgreens; chop if desired.
  6. Spread the mashed avocado mixture evenly over each slice of warm toasted bread.
  7. Arrange the halved cherry tomatoes evenly on top of the avocado.
  8. Top each slice generously with microgreens.
  9. Finish with a sprinkle of flaky sea salt and freshly cracked black pepper. Add optional red pepper flakes or drizzle balsamic glaze if desired.
  10. Serve immediately while the toast is warm and crisp.
