A quick and easy summer appetizer featuring juicy heirloom tomatoes, creamy burrata cheese, fresh basil, and toasted rustic bread, perfect for gatherings and casual meals.

Ingredients

  • 2 cups heirloom tomatoes, diced
  • 8 oz burrata cheese
  • A handful fresh basil leaves, roughly chopped
  • 3 tablespoons extra virgin olive oil
  • 12 cloves garlic, minced
  • Salt to taste (preferably flaky sea salt)
  • Freshly ground black pepper to taste
  • 1 loaf baguette or rustic Italian bread, sliced
  • Optional: balsamic glaze for drizzling

Instructions

  1. Wash and dice about 2 cups of heirloom tomatoes into bite-sized pieces. Place them in a mixing bowl.
  2. Roughly chop a handful of fresh basil leaves and mince 1-2 cloves of garlic. Toss both into the tomato bowl.
  3. Drizzle 3 tablespoons of extra virgin olive oil over the tomatoes and herbs. Add salt and freshly ground black pepper to taste. Stir gently to combine, making sure not to bruise the tomatoes.
  4. Slice your baguette or rustic bread into ½-inch thick pieces. Toast them on a grill pan or under the broiler until golden and crisp but not burnt. Watch closely to avoid charred edges.
  5. Tear or slice 8 ounces of burrata cheese into chunks. Spread or place a piece on each toasted bread slice.
  6. Spoon the fresh tomato and basil mixture generously over the burrata-topped bread slices.
  7. Sprinkle flaky sea salt and a little more black pepper on top. For an optional touch, drizzle a bit of balsamic glaze over each bruschetta for a sweet tang.
  8. Serve immediately while the bread is still crisp and the burrata creamy.

Notes

Drain excess tomato juice before mixing to avoid soggy bread. Let burrata sit at room temperature for 5 minutes before assembling for creamier texture. Toast bread just before serving to keep it crisp. Substitute burrata with fresh mozzarella or vegan cheese alternatives if desired.
