These fresh cucumber dill tea sandwiches offer a light, refreshing bite perfect for elegant parties and casual gatherings. Combining crisp cucumber, delicate dill, and a creamy spread on soft white bread, they are quick to prepare and crowd-pleasing.

Ingredients

Scale
  • 8 slices white sandwich bread, crusts removed
  • 1 medium English cucumber (about 7 oz), thinly sliced
  • 8 oz cream cheese, softened (full-fat preferred)
  • 1 tablespoon mayonnaise (optional)
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons fresh dill, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional garnish: thin slices of radish or microgreens

Instructions

  1. Wash and thinly slice the cucumber. If slices seem wet, pat dry with paper towels or drain in a strainer for 10 minutes to prevent sogginess.
  2. In a mixing bowl, combine softened cream cheese, mayonnaise (if using), lemon juice, chopped dill, salt, and pepper. Whip together until smooth and creamy. Adjust seasoning to taste.
  3. Trim crusts off the bread slices. If bread is thick, gently flatten each slice with a rolling pin to ease spreading and reduce bulk.
  4. Spread a generous layer of the dill cream cheese mixture on each slice of bread.
  5. Layer cucumber slices evenly over four slices of bread. Top with the remaining bread slices, spread side down.
  6. Cut each sandwich into quarters (triangles or rectangles as preferred). Arrange on a platter and garnish with optional radish slices or microgreens.
  7. Optional: Cover sandwiches with plastic wrap and refrigerate for 15-20 minutes before serving to meld flavors and keep crisp.

Notes

Use thinly sliced cucumbers and drain well to avoid soggy sandwiches. Softened cream cheese spreads more easily and prevents tearing bread. Chill sandwiches before serving for best texture. Variations include swapping dill for other herbs, using different breads, or adding smoked salmon for a luxurious twist. For vegan or gluten-free versions, use appropriate substitutes.
