A refreshing summer salad combining juicy watermelon, crisp cucumber, creamy feta, and a zesty lime dressing. Quick and easy to prepare, perfect for hot days and gatherings.

Ingredients

Scale
  • 4 cups seedless watermelon, cubed
  • 1 large English cucumber, thinly sliced or diced
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh lime juice (from 1 large lime)
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1 tablespoon extra virgin olive oil (optional)
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, a few grinds

Instructions

  1. Cut seedless watermelon into roughly 1-inch cubes (about 4 cups) and place in a large mixing bowl. Remove excess juice if melon is very juicy.
  2. Thinly slice or dice one large English cucumber and add to the bowl with watermelon.
  3. Crumble 1 cup of feta cheese by hand and gently fold into the watermelon and cucumber mixture.
  4. Roughly chop 1/4 cup fresh mint leaves and toss into the salad.
  5. Squeeze juice of one large lime (about 2 tablespoons) over the salad. Add 1 tablespoon extra virgin olive oil if using, along with a pinch of sea salt and freshly ground black pepper.
  6. Gently toss the salad with salad tongs or spoons to coat all ingredients evenly, being careful not to crush the watermelon or feta.
  7. Taste and adjust seasoning with extra lime juice or salt if needed.
  8. Serve immediately to preserve crispness. If preparing ahead, keep dressing separate and toss just before serving.

Notes

Use block feta crumbled by hand for creamier texture. Add lime juice just before serving to keep cucumber crisp. For dairy-free, substitute feta with firm tofu or vegan cheese. Keep dressing separate if prepping ahead to avoid sogginess.
