Light, refreshing cucumber hummus rolls perfect for a healthy summer snack. These no-cook rolls combine crisp cucumber with creamy hummus and fresh herbs for a quick and satisfying treat.

Ingredients

  • English or Persian cucumbers (8-10 thin strips per cucumber)
  • Hummus (classic or flavored, about 1 tablespoon per roll)
  • Fresh herbs (dill, parsley, or mint)
  • Crumbled feta cheese (optional)
  • Fresh lemon juice (a splash)
  • Olive oil (a light drizzle)
  • Salt and pepper to taste
  • Optional extras: thinly sliced bell peppers, grated carrots, toasted pine nuts

Instructions

  1. Slice the cucumber lengthwise into thin strips about 1/8 inch (3 mm) thick using a sharp knife or vegetable peeler.
  2. Lay the cucumber strips on paper towels and gently pat dry to remove excess moisture.
  3. In a small bowl, combine hummus with fresh lemon juice, salt, and chopped herbs. Add crumbled feta if using.
  4. Lay one cucumber strip flat and spread about 1 tablespoon of the hummus mixture evenly along the length, leaving about 1/2 inch clear at the edges.
  5. Add optional extras like bell pepper or carrot slivers on top of the hummus if desired.
  6. Starting from one end, gently roll the cucumber strip into a tight cylinder.
  7. Repeat with remaining strips and filling.
  8. Serve immediately or refrigerate for up to 2 hours to keep rolls crisp.

Notes

Thin slicing the cucumber is key to easy rolling. Pat cucumber strips dry to prevent soggy rolls. Use flavored hummus for variety. Rolls can be made up to 2 hours ahead and kept refrigerated. A toothpick can help hold rolls together if needed.
