A refreshing and light beverage combining crisp cucumber, fresh mint, lime juice, and a touch of natural sweetener, perfect for hot days and gatherings.

  • 2 medium English cucumbers (about 1 lb), peeled and chopped
  • 1/4 cup fresh mint leaves (about 1012 leaves)
  • 2 tablespoons fresh lime juice
  • 2 to 3 tablespoons honey, agave syrup, or simple syrup (adjust to taste)
  • 4 cups cold water
  • Ice cubes for serving

Instructions

  1. Peel and chop 2 medium English cucumbers into chunks. Gently rinse 1/4 cup fresh mint leaves and pat dry.
  2. Add cucumber chunks and mint leaves to a blender. Pour in 1 cup cold water to help blend smoothly. Blend on high for 1-2 minutes until pureed and vibrant green.
  3. Place a fine mesh strainer over a large bowl or pitcher. Pour the cucumber-mint puree through the strainer, pressing gently to extract as much liquid as possible. Discard or save the pulp for other uses.
  4. Stir in 2 tablespoons fresh lime juice and 2-3 tablespoons honey or preferred sweetener. Taste and adjust sweetness or lime juice as desired.
  5. Add the remaining 3 cups cold water to the strained juice and stir well. Transfer to a pitcher and refrigerate for at least 30 minutes to chill and meld flavors.
  6. Serve over ice cubes, garnished with extra mint leaves or thin cucumber slices if desired.

Notes

For best flavor, prepare the agua fresca fresh and consume within 24 hours. Adjust sweetness and lime juice after chilling as cold dulls flavors slightly. Straining is recommended for a smooth texture but can be skipped for a pulpier drink. Variations include adding watermelon, basil, cilantro, or a slice of jalapeño for different flavor profiles.
