  • 2 cups (480 ml) Greek yogurt (full-fat or 2%)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup (150 g) fresh berries (blueberries, raspberries, sliced strawberries)
  • 1/2 cup (60 g) crunchy pistachios, shelled and lightly toasted
  • 1 teaspoon freshly grated lemon zest

Instructions

  1. Line your baking sheet with parchment paper.
  2. In a mixing bowl, combine 2 cups (480 ml) of Greek yogurt with 2 tablespoons of honey or maple syrup and 1 teaspoon of vanilla extract. Stir gently until smooth and evenly sweetened. Adjust sweetness if needed.
  3. Spread the yogurt mixture evenly over the lined baking sheet to about 1/4-inch (6 mm) thickness.
  4. Sprinkle 1 cup (150 g) of fresh berries evenly over the yogurt.
  5. Lightly toast 1/2 cup (60 g) of shelled pistachios in a dry pan over medium heat for 2-3 minutes, stirring often.
  6. Scatter the toasted pistachios evenly on top of the berries.
  7. Add 1 teaspoon of freshly grated lemon zest over everything.
  8. Transfer the baking sheet to the freezer and freeze for at least 4 hours or until firm (overnight works best).
  9. Once frozen solid, remove from the freezer and peel the parchment paper off the bark.
  10. Break the bark into irregular pieces using a sharp knife or your hands.
  11. Serve immediately or store in an airtight container in the freezer with wax paper between layers to prevent sticking.

Notes

Use thick, full-fat Greek yogurt for best creamy texture. Toast pistachios lightly to enhance flavor. Freeze in a thin layer for even freezing. Let bark sit at room temperature for 5 minutes before breaking if too hard. Use a serrated knife for cleaner edges. For dairy-free version, substitute Greek yogurt with coconut-based yogurt and honey with maple syrup. Store in airtight container with wax paper between layers for up to 2 weeks.
