  • Optional: thinly sliced apple or pear
  • Cherry tomatoes, halved
  • Cucumber slices or baby carrots
  • Cheese cubes or string cheese (mild varieties like mozzarella or cheddar)
  • Whole grain crackers or mini rice cakes
  • Fresh herbs like parsley or chives for garnish (optional)

Instructions

  1. Prepare the spinach puree: Place fresh spinach leaves in a blender or food processor with 2 tablespoons of water. Blend until completely smooth. Set aside.
  2. Whisk the eggs: Crack 6 large eggs into a bowl. Add the milk or cream, salt, and pepper. Pour in the spinach puree and whisk everything together until the mixture is uniformly green and frothy.
  3. Cook the green eggs: Heat 1 tablespoon of unsalted butter in a non-stick skillet over medium-low heat. Once melted and slightly bubbling, pour in the egg mixture. Let it sit undisturbed for about 20 seconds until edges start to set.
  4. Gently scramble: Using a silicone spatula, slowly stir and fold the eggs, moving them from the edges to the center. Continue cooking for 2-3 minutes until mostly set but still slightly glossy and soft.
  5. Remove from heat: Take the skillet off the burner just before the eggs are fully firm, as they will continue to cook from residual heat. Transfer to a warm plate.
  6. Arrange the snack board: Neatly place the green scrambled eggs in a central spot on your serving board. Fan out slices of ham nearby. Add bowls or piles of cherry tomatoes, cucumber slices, cheese cubes, and crackers around the edges. Sprinkle fresh herbs if using.
  7. Optional fruit addition: Layer thin apple or pear slices between the ham or around the board for a sweet contrast.
  8. Serve immediately so the eggs remain warm and fluffy. If preparing ahead, cover the eggs loosely with foil and reheat gently in a low oven before serving.

Notes

Use fresh spinach for brighter color and cleaner flavor; frozen spinach can be used if thawed and excess water squeezed out. Cook eggs on medium-low heat to keep them tender and avoid rubberiness. Butter adds rich flavor; olive oil can be used as a substitute. For dairy-free, swap milk and butter with coconut milk and olive oil. Prepare ingredients ahead but assemble just before serving for best freshness.
