Instructions

  1. Preheat your oven to 400°F (200°C) and allow it to fully heat.
  2. Rinse and dry nectarines. Cut each in half and remove the pit. Quarter halves if large.
  3. Arrange nectarines cut side up in a single layer in a baking dish.
  4. Drizzle olive oil over nectarines and sprinkle cinnamon evenly.
  5. Coat nectarines with honey using a spoon or brush.
  6. Squeeze fresh lemon juice over the nectarines.
  7. Roast for 15-20 minutes until edges caramelize but fruit holds shape.
  8. While roasting, whisk Greek yogurt with vanilla extract until smooth and fluffy.
  9. Remove nectarines from oven and let cool slightly.
  10. Serve nectarines topped with the creamy vanilla yogurt and optional toasted nuts or granola.
