Bright, juicy fruit skewers soaked briefly in a mimosa mix of sparkling wine and orange juice, perfect for a vibrant and easy brunch treat.

  • Pineapple chunks (fresh preferred, canned works in a pinch)
  • Green grapes, whole
  • Orange segments, peeled and pith removed
  • Kiwi slices
  • Blueberries
  • 1 cup (240 ml) chilled sparkling wine or Prosecco
  • ½ cup (120 ml) fresh orange juice
  • Optional: fresh mint leaves for garnish
  • Wooden skewers, about 6 inches long

Instructions

  1. Wash and prep your fruit: rinse all fruit under cold water and pat dry thoroughly. Hull and halve strawberries, peel and segment oranges, slice kiwi into rounds, and cut pineapple into bite-sized chunks.
  2. Make the mimosa soak: in a medium bowl, combine 1 cup (240 ml) of chilled sparkling wine or Prosecco with ½ cup (120 ml) fresh orange juice. Stir gently.
  3. Soak the fruit: add the prepared fruit (except blueberries and grapes) into the mimosa mix and let it sit for about 3-5 minutes, stirring gently halfway through.
  4. Assemble the skewers: drain the fruit from the mimosa soak using a slotted spoon. Thread fruit pieces onto skewers, alternating colors and shapes for a vibrant look. Start with pineapple, then strawberry halves, orange segments, grape, kiwi slice, and finish with a blueberry on top.
  5. Garnish and chill (optional): lay the skewers on a serving platter, tuck fresh mint leaves between them, and chill until ready to serve.

Notes

Do not soak fruit for more than 5 minutes to avoid sogginess. Use firm fruits like pineapple, grapes, and kiwi for best texture. Chill sparkling wine and fruit before serving. Prepare fruit and mimosa mixture separately if making ahead to maintain freshness.
