Fresh Spring Crudité Platter with Creamy Herb Dip

A fresh and easy crudité platter featuring crisp spring vegetables paired with a creamy, herbaceous dip made from cottage cheese and fresh herbs. Perfect for gatherings or a healthy snack.

Ingredients

  • Carrots, peeled and cut into sticks
  • Cucumbers, sliced into rounds or sticks
  • Radishes, halved or quartered
  • Cherry tomatoes, whole or halved
  • Snap peas, trimmed
  • Bell peppers (red, yellow, or orange), sliced thin
  • Celery sticks
  • Optional: thin asparagus spears, blanched briefly
  • 1 cup cottage cheese (small-curd preferred)
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh dill, chopped
  • 1 clove garlic, minced
  • 1 tsp lemon juice (freshly squeezed)
  • Salt and black pepper, to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Wash all veggies thoroughly. Peel and cut carrots into sticks about 3 inches long and 1/2 inch thick. Slice cucumbers into rounds or sticks depending on preference. Halve or quarter radishes to manageable bite sizes. Trim snap peas and celery sticks. If using asparagus, blanch in boiling water for 1 minute, then plunge into ice water to keep bright green and crisp-tender.
  2. In a food processor, combine 1 cup cottage cheese, 1/2 cup sour cream or Greek yogurt, garlic, lemon juice, and chopped herbs. Pulse until smooth and creamy. Taste and season with salt, pepper, and optional smoked paprika or cayenne. If the dip is too thick, add a teaspoon of water or milk to loosen it up just a bit.
  3. Arrange the vegetables artfully on your serving platter, balancing colors and shapes. Place a bowl of the creamy herb dip in the center or off to one side. Garnish the dip with a sprinkle of extra chives or parsley for a fresh look.
  4. Serve immediately to keep the veggies crisp. If prepping ahead, cover and refrigerate the dip separately and the veggies wrapped in a damp towel to maintain freshness.

Notes

Use small-curd cottage cheese for a smoother dip. Fresh herbs are preferred for best flavor. Pulse the dip just enough to combine ingredients smoothly without turning it liquid. If dip thickens after chilling, stir in a splash of milk or water before serving. Veggies can be prepped ahead and stored wrapped in a damp towel to keep crisp. The dip can be made up to 2 days ahead and stored in an airtight container in the fridge.
