A festive and easy-to-make fruit pizza featuring a tender crust, creamy vanilla-honey cream cheese topping, and vibrant red, white, and blue berries, perfect for summer celebrations.

  • 1 cup (120 g) all-purpose flour
  • 1/4 cup (50 g) granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, chilled and cut into cubes
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (60 ml) honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) heavy cream, whipped
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • Optional: a few fresh mint leaves for garnish
  • 1/4 cup (60 ml) apricot preserves, warmed and strained
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. Add chilled butter cubes and blend with a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. In a small bowl, beat egg and vanilla extract together. Pour into flour-butter mixture and stir gently until dough just comes together. Add cold water 1 teaspoon at a time if too dry.
  4. Press dough evenly into bottom of a 9-inch pizza pan, creating a slight edge around rim about 1/4 inch thick.
  5. Bake for 15-18 minutes until golden brown and firm to touch. Remove and cool completely on a wire rack.
  6. Using a mixer, beat softened cream cheese until smooth. Add honey and vanilla extract and mix until combined.
  7. In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into cream cheese mixture until light and fluffy.
  8. Spread cream cheese topping evenly over cooled crust, leaving a small border around edges.
  9. Arrange sliced strawberries in a circle near crust edge, followed by a circle of blueberries inside that, then a ring of raspberries toward center to create a star-spangled effect.
  10. Warm apricot preserves with water until runny. Using a pastry brush, gently coat fruit with glaze to add shine and keep berries fresh.
  11. Refrigerate fruit pizza for at least 30 minutes before serving to let flavors meld and topping set.

Notes

Keep butter cold when making crust to ensure crumbly texture. Do not overmix dough to keep it tender. Whip cream cheese and cream gently to preserve light texture. Glaze fruit to add shine and freshness. Crust and topping can be prepared a day ahead and assembled before serving. Use foil to cover crust edges if browning too quickly.
