A quick and refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and a drizzle of balsamic glaze for a perfect balance of sweet and savory flavors.

Ingredients

  • 4 cups watermelon, cubed or balled
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt

Instructions

  1. Rinse the watermelon and cut into 4 cups of bite-sized cubes or use a melon baller for round shapes.
  2. Drain the watermelon slightly to reduce excess juice.
  3. Crumble 1 cup of firm feta cheese.
  4. Rinse fresh mint leaves, pat dry, remove stems, and chop finely to make 1/4 cup.
  5. In a large mixing bowl, gently toss together the watermelon, feta, and mint without mashing the watermelon.
  6. Drizzle 2 tablespoons of balsamic glaze evenly over the salad.
  7. Optionally add 1 tablespoon of extra virgin olive oil, a pinch of sea salt, and freshly ground black pepper to taste.
  8. Toss lightly to combine all flavors without breaking down the watermelon.
  9. Refrigerate the salad for 10-15 minutes before serving for best flavor, or serve immediately if short on time.
  10. Garnish with a few whole mint leaves before serving.

Notes

Use ripe, seedless watermelon for best sweetness. Keep feta cold for firmer texture. Use fresh mint leaves, not dried. Drizzle balsamic glaze gently to avoid over-saturating the watermelon. Serve soon after tossing to prevent sogginess. Refrigerate for 10-15 minutes before serving to meld flavors. Store leftovers in airtight container up to 2 days; drain excess liquid and add fresh balsamic glaze before serving again.
