A refreshing summer salad combining juicy watermelon, salty feta, and bright mint with a tangy lime dressing. Perfect for light meals or as a vibrant side dish.

Ingredients

Scale
  • 4 cups watermelon, cubed (seedless or seeds removed)
  • 1 cup feta cheese, crumbled (preferably block feta)
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 2 limes (about 3 tablespoons), freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey (or maple syrup as a substitute)
  • Pinch of salt
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Cube the watermelon into 1-inch (2.5 cm) pieces and transfer to a large mixing bowl.
  2. Rinse and pat dry the mint leaves, then chop finely and add to the bowl with watermelon.
  3. In a small bowl, whisk together fresh lime juice, olive oil, and honey until well combined. Add a pinch of salt and freshly ground black pepper to taste.
  4. Crumble the feta cheese over the watermelon and mint mixture.
  5. Pour the lime dressing over the salad and gently toss to coat all ingredients without breaking up the watermelon pieces.
  6. Taste and adjust seasoning if needed. Let the salad rest for 5-10 minutes at room temperature before serving to allow flavors to meld.

Notes

Use ripe watermelon for best sweetness. Use block feta for better texture. Fresh lime juice is essential for bright flavor. Toss gently to avoid crushing watermelon. Prepare and dress salad just before serving to keep watermelon crisp. Variations include grilled watermelon, vegan cheese substitutes, or adding chili flakes for heat.
