Fresh Watermelon Feta Mint Skewers with Honey Lime Drizzle

A quick and easy summer appetizer combining juicy watermelon, creamy feta, fresh mint, and a sweet-tangy honey lime drizzle for a refreshing and crowd-pleasing snack.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or cubed
  • Fresh mint leaves, whole, washed and dried
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • Optional: pinch of flaky sea salt

Instructions

  1. Cut the watermelon into 1-inch cubes, removing any seeds or rind.
  2. Cube the feta cheese roughly the same size as the watermelon or use large crumbled pieces.
  3. Wash and dry fresh mint leaves.
  4. Assemble the skewers by threading a watermelon cube, a folded mint leaf, then a feta cube. Repeat until the skewer is filled, leaving space at the ends.
  5. In a small bowl, whisk together 2 tablespoons honey and 1 tablespoon fresh lime juice until smooth.
  6. Arrange the skewers on a serving platter and drizzle the honey lime mixture evenly over them.
  7. Optionally, sprinkle with a pinch of flaky sea salt.
  8. Chill the skewers in the refrigerator for 10 minutes before serving for extra refreshment.

Notes

Use firm, ripe watermelon to avoid soggy skewers. Handle feta gently to keep cubes intact. Fresh mint is essential for flavor and texture; basil can be a substitute. Assemble close to serving time to keep skewers fresh. Soak wooden skewers in water for 20 minutes to prevent splinters. Chill skewers before serving for best taste. Store leftovers refrigerated up to 24 hours with drizzle separate.
