  • Freshly ground black pepper (optional)

Instructions

  1. Cut about 1.5 pounds of ripe, seedless watermelon into 1-inch cubes.
  2. Crumble 1 cup of good-quality feta cheese gently with fingers or a fork.
  3. Wash, pat dry, and roughly chop 1/4 cup of fresh mint leaves.
  4. Whisk together 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lime juice, a pinch of sea salt, and optional black pepper in a small bowl.
  5. In a large bowl, combine watermelon cubes, crumbled feta, and chopped mint.
  6. Drizzle the dressing over the salad and gently toss using salad servers or clean hands, being careful not to break down the watermelon.
  7. Taste and adjust seasoning with extra lime juice or salt if needed.
  8. Chill the salad in the refrigerator for 10-15 minutes before serving to let flavors meld and enhance refreshment.

Notes

Use ripe, seedless watermelon for best sweetness. Drain watermelon cubes if very juicy to avoid sogginess. Add dressing just before serving for best texture. For dairy-free, substitute feta with marinated tofu or vegan cheese. Fresh mint is preferred over dried for flavor.
