A light and refreshing summer snack combining juicy watermelon cubes with tangy feta cheese, fresh mint, and a touch of olive oil and black pepper. Perfect for gatherings or a quick, healthy treat.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or cubed (about 1 inch)
  • Fresh mint leaves, whole (optional but recommended)
  • Extra virgin olive oil, light drizzle
  • Freshly ground black pepper, a pinch
  • Balsamic glaze (optional)
  • Wooden skewers, about 6 inches long

Instructions

  1. Wash the watermelon thoroughly and cut into 1-inch cubes, ensuring they are firm and not too juicy.
  2. Cube the feta cheese into 1-inch pieces or use crumbled feta carefully for threading.
  3. Rinse fresh mint leaves and pat dry, keeping them whole.
  4. In a mixing bowl, gently toss watermelon cubes with a light drizzle of extra virgin olive oil and a pinch of freshly ground black pepper.
  5. Thread a watermelon cube, followed by a mint leaf, then a feta cube onto each skewer. Repeat the pattern if the skewer is long enough.
  6. Arrange the skewers on a serving platter and drizzle lightly with balsamic glaze if desired. Optionally sprinkle extra black pepper.
  7. Refrigerate the skewers for 10-15 minutes before serving to let flavors meld and keep them cool.

Notes

Use firm, seedless watermelon for best results. If feta is crumbly, freeze for 10 minutes before cutting to firm it up. Assemble skewers just before serving to avoid sogginess. Optional balsamic glaze and fresh mint add extra flavor. Wooden skewers can be soaked in water for 15 minutes if grilling briefly for a smoky twist.
