Fresh Watermelon Lime Mint Popsicles

A quick and easy 5-ingredient summer treat combining juicy watermelon, fresh lime juice, and mint for a refreshing and wholesome popsicle.

  • 4 cups (600 g) watermelon, cubed and deseeded
  • 1/4 cup (60 ml) fresh lime juice
  • 1520 fresh mint leaves, washed and roughly chopped
  • 2 tablespoons (30 ml) honey or agave syrup
  • 1/2 cup (120 ml) cold water
  • Optional: 1/4 cup sparkling water for fizz

Instructions

  1. Cut about 4 cups (600 g) of ripe watermelon into cubes, removing seeds.
  2. Place 15-20 fresh mint leaves in a blender or small bowl and gently muddle with a muddler or back of a spoon for about 30 seconds to release oils without bitterness.
  3. Add watermelon cubes, 1/4 cup (60 ml) fresh lime juice, 2 tablespoons (30 ml) honey or agave syrup, and 1/2 cup (120 ml) cold water to the blender.
  4. Blend on high for 1-2 minutes until smooth and vibrant.
  5. Optional: Pour mixture through a fine mesh strainer to remove mint bits and pulp for a smoother texture.
  6. Carefully pour the mixture into popsicle molds, leaving space at the top for expansion. Insert sticks and cover if molds have lids.
  7. Freeze for at least 4-6 hours or overnight until solid.
  8. To unmold, briefly run warm water over the outside of the molds for 10-15 seconds and gently pull on the sticks before serving.

Notes

Use ripe watermelon for best sweetness. Freshly squeeze lime juice for brighter flavor. Avoid over-muddling mint to prevent bitterness. Adjust sweetness based on watermelon sweetness. Let popsicles freeze solid for at least 4 hours. Lightly oil molds to prevent sticking. Stir mixture gently during freezing to reduce ice crystals if desired.
