A refreshing and colorful dessert featuring thick watermelon slices topped with creamy Greek yogurt and mixed berries, perfect for hot summer days and quick to prepare.

Ingredients

Scale
  • 1 large round seedless watermelon, chilled and sliced into 1-inch thick rounds
  • 1 cup plain or vanilla-flavored Greek yogurt
  • 1 cup mixed berries (strawberries hulled and sliced, blueberries, raspberries, blackberries)
  • 2 tablespoons honey or maple syrup (optional)
  • A handful of fresh mint leaves, finely chopped or whole for garnish
  • Optional: chia seeds or crushed nuts (such as chopped pistachios or sliced almonds)

Instructions

  1. Chill the watermelon in the fridge for a few hours beforehand.
  2. Slice a 1-inch thick round from the middle of the watermelon using a sharp chef’s knife. Trim the rind if desired.
  3. Rinse mixed berries gently under cold water and pat dry. Hull and slice strawberries thinly.
  4. Spread about ¾ cup of Greek yogurt evenly over the watermelon round, leaving a small border around the edge.
  5. Arrange the mixed berries artistically over the yogurt layer.
  6. Drizzle 2 tablespoons of honey or maple syrup over the top if desired.
  7. Sprinkle fresh mint leaves and optional chia seeds or crushed nuts for texture and flavor contrast.
  8. Cut into wedges with a sharp knife and serve immediately cold.

Notes

Use a thick 1-inch watermelon slice to prevent sogginess. Spread yogurt gently to avoid squeezing juice out of the watermelon. Serve immediately for best texture. For a dairy-free version, substitute Greek yogurt with coconut or almond milk yogurt. Fresh berries are preferred over frozen for texture. You can lightly toss berries with cornstarch if very juicy to prevent runny yogurt.
