  • 1 tablespoon (15 ml) passion fruit pulp (optional)
  • Honey or maple syrup, for drizzling (optional)
  • Pinch of fresh lemon or lime zest
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Toast 1 thick slice of sourdough bread until golden and crunchy but not burnt, about 3-4 minutes in a skillet over medium heat or 2-3 minutes in a toaster.
  2. Spoon about ⅓ cup (80 ml) of plain Greek yogurt onto the toast, spreading gently with the back of a spoon to create an uneven white ‘egg white’ layer.
  3. Peel and thinly slice ½ a ripe mango into oval shapes approximately 2-3 inches long and ⅛ inch thick.
  4. Arrange 3-4 mango slices in the center of the yogurt to form the ‘yolk,’ overlapping slightly for fullness.
  5. Optional: Spoon 1 tablespoon (15 ml) of passion fruit pulp in the center of the mango slices for a tangy ‘yolk’ effect.
  6. Sprinkle a pinch of fresh lemon or lime zest over the toast, then drizzle lightly with honey or maple syrup if desired.
  7. Garnish with small fresh mint leaves for aroma and color.
