A bright and refreshing salsa combining juicy peaches, zesty jalapeño, and fresh cilantro for a perfect summer dish that’s quick and easy to make.

Ingredients

Scale
  • 3 medium ripe peaches, diced
  • 1 small jalapeño pepper, finely chopped (seeds removed for less heat)
  • ½ cup fresh cilantro, chopped
  • ¼ cup red onion, finely diced
  • Juice of 1 large lime
  • ½ teaspoon salt
  • Optional: pinch of ground cumin
  • Optional: 1 teaspoon honey (if peaches aren’t sweet enough)

Instructions

  1. Rinse and pat dry the peaches. Remove pits and dice into small, roughly ½-inch cubes.
  2. Slice the jalapeño in half lengthwise, remove seeds and membranes if you want a milder salsa, then finely dice.
  3. Finely chop about ¼ cup of red onion.
  4. Roughly chop about ½ cup fresh cilantro leaves and tender stems.
  5. In a medium bowl, combine diced peaches, jalapeño, red onion, and cilantro. Gently toss to combine.
  6. Squeeze the juice of one large lime over the mixture and sprinkle with ½ teaspoon salt. Stir gently to mix evenly. Taste and adjust salt or lime if needed.
  7. Allow the salsa to sit for at least 10 minutes before serving to let flavors meld. For best flavor, chill in the fridge for 30 minutes if possible.

Notes

Letting the salsa rest allows the lime and salt to soften the onions and mellow the jalapeño heat. If salsa seems watery after resting, gently drain some liquid or add a pinch of chili powder to thicken. Use ripe but firm peaches to avoid mushy texture. Adjust jalapeño seeds to control heat level.
