Ingredients

  • 6 cups Rice Krispies cereal
  • 6 tablespoons unsalted butter
  • 10 ounces mini marshmallows (about 6 cups)
  • 2 tablespoons molasses
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Optional toppings: white chocolate drizzle, holiday sprinkles, or crushed gingerbread cookies

Instructions

  1. Line a 9×13-inch baking dish with parchment paper or lightly grease it with butter. Set aside.
  2. In a large saucepan, melt 6 tablespoons of unsalted butter over medium heat. Stir frequently to prevent browning.
  3. Once the butter is melted, add 10 ounces (about 6 cups) of mini marshmallows. Stir continuously until the marshmallows are fully melted and smooth.
  4. Reduce the heat to low and stir in 2 tablespoons of molasses, 1 teaspoon of ground ginger, 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1 teaspoon of vanilla extract. Mix until the spices are evenly incorporated.
  5. Remove the saucepan from heat and quickly fold in 6 cups of Rice Krispies cereal. Stir gently but thoroughly to coat the cereal evenly with the marshmallow mixture.
  6. Transfer the mixture into the prepared baking dish. Use a piece of parchment paper or a greased spatula to press the mixture down firmly and evenly.
  7. Let the treats cool at room temperature for about 30 minutes or until set. For quicker cooling, place the pan in the refrigerator for 15 minutes.
  8. Once cooled, lift the parchment paper to remove the treats from the pan. Cut into squares or rectangles using a sharp knife.
  9. Serve and enjoy!
