  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup semi-sweet chocolate chips
  • Flaky sea salt (for finishing, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place a 5-inch or 6.5-inch cast iron skillet in the oven while it preheats.
  2. In a medium bowl, combine the softened butter, granulated sugar, and brown sugar. Whisk or beat until light, fluffy, and well combined, about 2 minutes. Scrape down the sides.
  3. Add the egg yolk and vanilla extract. Whisk until smooth and glossy.
  4. In a separate small bowl, whisk together the flour, cocoa powder, baking soda, and salt until no lumps remain.
  5. Gradually add the dry ingredients to the wet mixture. Stir with a spatula or wooden spoon just until combined. Do not overmix.
  6. Fold in the chocolate chips. Reserve a few chips to press into the top of the dough later.
  7. Carefully remove the hot skillet from the oven. Spoon the cookie dough into the center of the skillet. Use the back of a spoon or your fingers to gently press the dough into an even layer, all the way to the edges. Press the reserved chocolate chips into the top.
  8. Bake for 12-15 minutes. Start checking at 12 minutes. The edges should look set and slightly cracked, but the center should still look soft, puffy, and slightly underdone. A toothpick inserted in the center should come out with moist crumbs.
  9. Remove the skillet from the oven and immediately sprinkle a pinch of flaky sea salt over the top. Let it cool in the skillet for 5-10 minutes before serving.

Notes

Don’t overbake! The cookie will look underdone when you pull it out, but it continues to cook in the hot skillet. Room temperature ingredients matter for best texture. Preheating the skillet gives the edges a crispier texture. For a gluten-free option, use a 1:1 gluten-free all-purpose flour blend with xanthan gum. For a vegan adaptation, use vegan butter and a flax egg.
