  • 4 whole wheat tortillas (8-inch)
  • 1 cup (100 g) shredded cheddar cheese
  • 1/2 cup (120 g) black beans, drained and rinsed
  • 1/2 cup (80 g) fresh or thawed corn kernels
  • 2 stalks green onion, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Fresh cilantro (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Dice 1 pound (450 g) of chicken breast into small, bite-sized pieces and set aside.
  2. In a mixing bowl, toss the diced chicken with garlic powder, ground cumin, smoked paprika, chili powder, salt, black pepper, and olive oil. Mix well and let rest for 5 minutes.
  3. Preheat a non-stick skillet over medium heat for about 5 minutes. Cook the seasoned chicken, stirring occasionally, until no longer pink and cooked through, about 6-8 minutes. Alternatively, cook chicken directly in the air fryer.
  4. Once the chicken cools slightly, stir in black beans, corn kernels, shredded cheddar cheese, and sliced green onions. Mix gently to combine.
  5. Lay out 4 whole wheat tortillas and cut each into 4 equal squares (16 pieces total). Spoon about 1 tablespoon of the chicken mixture onto the center of each square. Fold the corners toward the center to form small bites and pinch edges to seal, using a dab of water if needed.
  6. Preheat the air fryer to 375°F (190°C) for 3 minutes. Place burrito bites in a single layer in the basket, leaving space between them.
  7. Air fry for 8-10 minutes, flipping halfway through, until tortillas are golden and crispy and cheese is melted inside. Add 2 more minutes if extra crispiness is desired, watching closely to avoid burning.
  8. Garnish with fresh cilantro and serve with lime wedges or your favorite salsa. Enjoy warm.

Notes

Use small chicken pieces for even cooking. Don’t overfill tortillas to keep bites neat. Lightly brush bites with olive oil for extra crispiness. Flip halfway through air frying for even browning. Rest bites a few minutes after cooking to let cheese set. Cook in batches if air fryer basket is crowded. Can bake in oven at 400°F for 12-15 minutes if no air fryer is available.
