  • ½ cup (120g) plain non-fat Greek yogurt
  • ¼ cup (25g) freshly grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper to taste
  • Optional: croutons or toasted nuts for crunch

Instructions

  1. Cook the chicken: Heat a skillet over medium heat. Add 1 teaspoon olive oil and cook chicken breasts for 6-7 minutes per side until fully cooked and golden brown. Let rest 5 minutes, then dice or shred.
  2. Prepare the Caesar dressing: In a medium bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and olive oil. Stir in Parmesan cheese. Season with salt and pepper to taste.
  3. Wash and dry lettuce leaves thoroughly to keep them crisp.
  4. Combine chicken and dressing: Toss diced chicken in the dressing until evenly coated.
  5. Assemble lettuce bites: Spoon dressed chicken onto each lettuce leaf. Optionally sprinkle with extra Parmesan or croutons. Serve immediately.

Notes

For dairy-free, substitute Greek yogurt with coconut-based yogurt and Parmesan with nutritional yeast. Use rotisserie chicken for convenience. Assemble just before serving to keep lettuce crisp. Store chicken mixture and lettuce separately if prepping ahead.
