A quick and easy Instant Pot beef chili recipe combining tender beef, hearty beans, and smoky spices for a comforting meal perfect for any occasion.

  • 1.5 pounds ground beef (80/20)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth (low sodium preferred)
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon cocoa powder
  • Salt to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro

Instructions

  1. Prepare your ingredients: chop onion and bell pepper, mince garlic, drain and rinse beans (10 minutes).
  2. Turn Instant Pot to Sauté setting. Heat olive oil, add onion and bell pepper, cook until softened about 3-4 minutes.
  3. Add garlic and cook 30 seconds until fragrant. Add ground beef, break up with spoon, cook until no pink remains about 5 minutes. Drain excess fat if desired.
  4. Stir in chili powder, cumin, smoked paprika, cocoa powder, salt, and black pepper. Toast spices with beef and veggies for 1-2 minutes.
  5. Add beef broth, diced tomatoes, tomato paste, kidney beans, and black beans. Stir to combine.
  6. Seal Instant Pot lid and set to Pressure Cook (high) for 20 minutes. Allow 10 minutes for pressure to build before timer starts.
  7. Let pressure release naturally for 10 minutes, then carefully release remaining pressure.
  8. Open lid, stir chili, taste and adjust seasoning if needed. Add broth or water if too thick.
  9. Serve warm with optional toppings like sour cream, cheese, or green onions.

Notes

Do not skip sautéing the beef and spices to build flavor. Drain excess fat after browning to avoid greasy chili. Use fresh spices for best taste. Natural pressure release helps thicken chili and settle flavors. If chili is too watery, simmer uncovered on sauté mode to reduce. Can substitute ground turkey or plant-based crumbles. For vegetarian version, use tofu and vegetable broth.
