This one-pan recipe combines smoky-sweet honey BBQ glaze, juicy chicken, and fluffy seasoned rice for a quick, flavorful summer dinner.

  • 46 boneless, skinless chicken thighs
  • 1 cup uncooked white rice (long-grain, jasmine, or basmati)
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped parsley (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Season chicken thighs generously with salt, pepper, garlic powder, and smoked paprika.
  3. Place the chicken thighs in the hot pan and sear for 3-4 minutes per side or until golden brown. Remove and set aside.
  4. In the same pan, add 1 cup of uncooked white rice. Stir for 1-2 minutes until lightly toasted.
  5. Pour in 2 cups of chicken broth and scrape the bottom of the pan to release any flavorful bits.
  6. Stir in 1/2 cup BBQ sauce and 2 tablespoons honey. Mix well to combine.
  7. Return the chicken thighs to the pan, placing them on top of the rice.
  8. Cover the skillet and reduce heat to low. Simmer for 20-25 minutes or until the rice is tender and the chicken is cooked through (internal temperature should reach 165°F/74°C).
  9. Remove from heat and let the dish rest, covered, for 5 minutes before serving.
  10. Optional: Garnish with chopped parsley for a pop of color and freshness.
